Oven Baked Tomato Sauce

tomato-2Many many years from now, I’d like to retire and have a small backyard orchard, full of productive fruit and vegetable crops. We would have far too much of everything to know what to do with, and we’d give it all away to family, friends, and neighbours. With all the extra tomatoes we’d grow, we would make litres of tomato sauce and bottle it up, becoming slightly famous as a result (because it tastes so damn good). It would be idyllic.

Well, the other day, I could scarcely believe it when my parents gave me 2kg of tomatoes. Here was my chance to have a head-start on retirement and make some homemade pasta sauce!

Oven Baked Tomato Sauce

This is a great base sauce that can be enjoyed by itself on pasta, served with fresh basil and parmesan, or in a casserole, stew or with meatballs. It can be left on its own in the oven for hours, allowing you to get on and do other things!

Ingredients:

  • 1kg tomatoes – cored with seeds removed and roughly chopped
  • 2 carrots, thinly sliced
  • 3 cloves of garlic finely chopped
  • 2/3 cup of olive oil
  • 2/3 cup of red wine or red wine vinegar
  • 15 basil leaves – torn up
  • Salt and pepper to taste at the end
  • Preheat oven to 150C

Method:

  1. Mix all ingredients together in a 2L casserole or dutch oven, even a roasting pan will do. Cover and bake for at least 2 hrs – baking for longer will result in a more concentrated sauce.
  2. Allow to cool.
  3. Blend the sauce until smooth with a food processor.
  4. Salt and pepper to taste.
  5. Bottle it up and give to your family and friends.
  6. Easy as!

The shoot before the storm…Part #2

Sa-1As promised, here is the second part to my shoot with Steven plus a bonus costume change! Don’t forget to check out his facebook and tumblr pages for more of his fab work!

The weekend has been a crazy whirl of rehearsing for wedding, showing relatives around Perth who are visiting for the wedding, making cupcakes for the wedding, and ultimately finally attending the wedding!!!! (Did I mention Eu-Jinn’s sister got married last weekend?) There will be plenty of nuptial-related snaps to come this week…but I’m still recovering this morning so you’ll just have to wait…zzz…

Oh, and before I slip back into my dreams, I can reveal that my next project with Steven Chew will be a video! (Pressure’s on now Steven…) Keep posted for that one, it’s going to be a cracker!

The shoot before the storm…Part #1

Last Saturday I had the opportunity to do a photoshoot with the very talented Mr Steven Chew! Steven is a lifestyle and portrait photographer based in Perth, Western Australia (he also does a mean wedding shoot and dabbles in film, and when I say dabbles I mean rocks it!).

Check out his facebook site here and tumblr here!

The photos were taken out and about our home and we only had about an hour to shoot as a sudden unexpected storm blew up (I hear there were hailstones in some areas!). Despite the approaching dark grey clouds in the horizon, we had a fun day, and the garden enjoyed its bonus watering! (Both from myself and the storm! Better be getting some mega strawberries now…)I’ll hopefully be collaborating with Steven on something a bit different in the near future (just you wait!), but in the meantime part #2 will be up next week featuring the second “costume change”. Who knew my garden could look so good? Must be a good photographer – that’s mad skillz…But Steven’s way of not only capturing the light but also the heart and story behind the person is what makes his photography stand out. Look out for more work anon!
